I have to share this post with you! I am soooo going to try this when I get home. The kids will probably hate it because, well, they don't know what's good. Kids are funny that way.
However, I, on the other hand know that anything with spinach and feta cheese will be absolutely awesome. Plus, anything Kitch makes is FAN-Freaking-TASTIC!!

This is a quick, easy and TASTY dish!
8 eggs splash of milk 2 tablespoons each of any veggie that you desire (I used bell peppers and red onion) 1/2 cup of ham or bacon cut into small pieces 1/2 cup (or more if you like lots of cheese like I do)! Use 1/2 in dish and half to top.
- Place veggies and meat into greased 8x8 inch pan
- Add 1/2 of the cheese
- Beat the eggs & milk together, pour into pan
- Bake @ 350F for approximately 45 minutes. Top with second half of cheese in last ten minutes of cooking.
- Test with toothpick in center of dish.
Serves 4. This is nice with Shawna's Rich Tea Biscuits warm out of the oven!

It's Tuesday. No particular special day. It's a few days away from Valentine's. Wasn't an exciting day at work. I even took the day off from exercising. It's just a plain Terrific Tuesday :) LOL!
What was so Terrific?
- I had "lunch" with my hubby today - it's been awhile since we could have lunch ALONE at home together...We didn't waste it, I can tell you that!
- I found some new tools online that will help with work and business
- My sister sent an email inviting us all to start creating a "memoir" of our lives growing up - an amazing idea and I'm really pumped about it!
- I feel like we're moving forward; a lot of things on the go with our business - really EXCITED!!
- I get to have two FANTASTIC kids staying with us for a couple days - they are like nieces to me, and we've missed them terribly!
- I made this YUMMY martini that I just invented....Grey Goose Goodness
As you can see, pretty ordinary stuff. But, the point I'm trying to make (feeling slightly tipsy as I write this...) is that life is so very short to waste time thinking about all the CRAP that happens any given day. There is always the CRAP. There's no escaping it. The best way I've found to "deal" with it (and no, it's not drinking.....I know you guys are thinking that.....LOL!) No, it's in counting those blessings. Those little things that make the day special. Even if it's just one thing. Think about that for a minute....
How to make Grey Goose Goodness
In a Martini Shaker with lots of ice, shake the following: - 2 shots of Grey Goose Vodka
- 2 shots Triple Sec
- 4 shots Mott's Margarita Mix (yeah, I'm lazy...)
- 4 shots water
This makes two martini's, but I don't play well with other children, so I drank both! LOL!!
Don't wait for a "special occasion"! Don't wait for an anniversary, or Valentine's day or whatever. Just DO IT today! Find something to love in each and every day. You are blessed to be alive and have people in your life that love you! Grab on and don't let go! It's all cliche, but it is so totally true!

When I think of Valentines Day I think of chocolate! I thought that I would share this recipe for any fellow chocoholics out there!
Ingredients:
2 shots Godiva Caramel Milk Chocolate Liquer (or substitue any chocolate liquer) 1 shot Bailey's Irish Cream 1 shot Creme de Cacao (Or substitute Kaluha if you prefer!) 2 shots half and half 1 shot quality vodka
1. Fill a martini shaker half full of ice. 2. Add all of the ingredients to the shaker. 3. Shake vigorously. 4. Pour into a chilled martini glass * You can garnish with a small chocolate such a Hershey's kiss or a berry. (Raspberry, strawberry etc.) Enjoy! |

This is a great potluck salad or just to have any day! I made it at a friends house last minute and it went over great!
6 cups of torn lettuce
1 can of black beans (drained and rinsed)
1 cup of corn drained
1 1/2 cups of salsa
1/2 cup of shredded cheese
1/4 cup of sour cream
1 cup of tortilla chips - broken
Arrange lettuce in bowl. Layer beans, corn and salsa. Sprinkle chips, drizle sour cream and top with crushed tortilla chips.
For healthier options use low fat sour cream and baked tortilla chips.

This is incredibly easy to make, just four simple ingredients. Yet it tasted so good and the nutritional benefits of Salmon are huge!
Ingredients: 4 pieces of salmon
1 red pepper cut into thin strips
3 cups of snap peas
4 tablespoons of Asian Sesame Dressing
Place one piece of fish on foil sheet (spray with cooking spray to keep from sticking).
Add veggies and top with a tablespoon of dressing/packet.
Wrap into foil packet and grill on BBQ for 8-10 minutes or Bake 20 minutes on 350 Degrees.

I quite often will have a stir-fry for a supper when I don't have alot of time.
I usually have a bag of oriental frozen veggies on hand and some brown minute rice.
Just cook up the rice as per intructions (about 10 minutes). Sitr fry any meat that you have on hand (beef, pork, chicken or shrimp). Add frozen veggies to meat. Add soy sauce, garlic, teryaki, or sauce that you have on hand. Really whatever you want to flavour it!
This meal takes no time at all and is so simple to make. It is a great alternative to eating out!

1 can pear or peach slices
1 cup graham cracker crumbs or any cookie crumbs
1/4 cup light cream cheese spread
1 cup whip cream
Drain fruit (reserve 4 tbsp juice) Sprinkle crumbs into 4 dessert cups. Mix cream cheese and reserved juice. Stir in whip cream. Spoon over crumbs. Top with fruit. Sprinkle crumbs over top.
